new to tell“
After 30 years of work in the countryside I grew to realize that not even a hundred more would suffice to understand all the secrets of the vine. Making wine is a journey that never ends, in which there is always something new to look into, to experiment and to say. I could define myself as a 'Wine-sailor'. More humbly, I put myself to service of something beautifully immense.
What does make poetry unique? More than words, form and meaning. Such is also the wine: the art of composition.
On the great classics - the Valpolicella and other DOC wines from Veneto – I intervene on the technique, looking for a result always getting better: the highlighting of a scent, the research of the right tannic weave. It is however the experiments which give me the opportunity of feeling something new and dare with respect: the sur lie, the pressing at a controlled temperature, the fermentation and the refinement in amphoras. Bottles of unique personality, daughters of a never ending research.
